Moose are big animals, and when hunters find success when moose hunting with us at Alaska’s Becharof Lodge, they usually go home with plenty of backstrap, along with hundreds of pounds of other great eating meat. While the tenderloins of moose are often consumed in camp, moose backstraps are big enough that much of this choice cut makes it home; sometimes, a moose tenderloin even makes it home with our hunters.
Here’s a recipe we like, and we use the same Cabela’s pellet grill at our main lodge in Egegik, Alaska. We also have one of these pellet grills at our fishing lodge, on the upper Egegik River. Since moose backstraps are so big, they can be cut to the size shown in this video. Moose tenderloins can usually be cut in half, and work great with this recipe.
